Spatchcock Chicken Recipe


Try your own BBQ spatchcock chicken. Firstly come and get one or two small chickens and ask for them to be prepared as spatchcock chickens. When you get them home brine them. This is really simple, a solution that is 95% water and 5% salt. Leave them in the solution for at least three hours. This will bring out flavour and help with the cooking.


Remove from the brine and season with freshly ground black pepper (you don’t need more salt!) and then rub olive oil over the chicken.


Place on a hot area of the BBQ and colour both sides for 2 ½ minutes, move to a cooler place (or lift it up higher) and cover with a lid for around 20 minutes. Use a meat thermometer to check its cooked (we sell these too). Delicious.
