A new pork dish

We are constantly looking for recipes that help you create delicious meals and this one is certainly looking special.

Taking a very fine cut of pork we add diced root vegetables and some peppers. Then a layer of apricots which work exceptionally well with pork, add some stuffing, this is all rolled in the pork and wrapped with streaky bacon.

Roasted in the oven like a normal joint the flavours infuse creating a delicious meal.
